Spiced Brown Sugar Oat Cakes

 1 cup quick-cooking oats, or old-fashioned oats that have been processed for a few seconds in the food processor
 ½ cup whole-wheat flour
 ½ cup all-purpose flour
 2 tsp baking powder
  cup brown sugar
 ½ tsp salt
 2 tsp pumpkin pie spice or 1 teaspoon cinnamon, 1/4 teaspoon ginger, 1/4 teaspoon nutmeg and 1/8 teaspoon cloves
 2 large eggs
 ¾ cup buttermilk
 ¼ cup applesauce
 1 tsp vanilla extract

Preheat the oven to 400º. Grease or line 12 large muffin cups or 24 mini muffin cups. In a large mixing bowl, whisk together the dry ingredients (oats through spices). In a separate bowl or measuring cup, whisk together the wet ingredients until blended.

Create a well in the middle of the dry ingredients and pour in the wet ingredients. Mix the wet ingredients into the dry with a wooden spoon until just combined. Fill the muffin cups about 2/3 full of batter and bake in the preheated oven for 18 or 20 minutes or until a toothpick inserted in the center of a cake comes out with just a few crumbs clinging to it. Cool for 10 minutes before removing from the pans.
